Ingredients
Corn:
6 Ears of corn, husked and corn silk removed
4 t Oil
1/4 t Salt
1/2 t Chili powder
Sauce:
4 Tbsp Mayonnaise
3 Tbsp Sour cream
1/4 tsp Cayenne
1/4 tsp Chili powder
1/4 tsp Black pepper
3 Tbsp Chopped cilantro
Lime juice
Fresh garlic
1/3 c Queso Fresco cheese (or feta)
Method
- Pre-heat grill on high heat.
- Sauce: Combine all sauce ingredients in a large bowl or casserole, stirring to combine. Set aside.
- Corn: Combine oil, salt and chili powder in another large bowl or casserole. Roll corn ears in oil mixture to coat completely. Grill corn for 7-12 minutes over medium-high heat, turning occasionally to ensure even cooking. Corn will char slightly.
- When corn comes off the grill, place into bowl with sauce and turn to coat. Place on a serving plate and serve.
