I made this on our trip to Playa del Carmen, Mexico.
1 cup diced orange segments
1/8 cup finely diced red bell pepper
1/8 cup finely diced red onion
1/2 jalapeno pepper, minced (remove some or all of the membrane/seeds if you want it milder) 1/2 bunch cilantro, chopped
1/2 cup orange juice
1 tablespoon maple syrup
1 tablespoon good tequila
1 tablespoon lime juice
2 tablespoons olive oil
Salt and Pepper
4 (12 oz) mahi mahi fillets
- Combine orange, red pepper, scallions, red onion, jalepeno, and cilantro. Add orange juice, syrup, tequila, lime juice, and olive oil. Season, to taste, with salt and pepper.
- Grill the fish fillets for 4 minutes on each side and top with salsa.
